One of my favs
1/2c oats ~ I used g-free Bobs Red Mill
1c almond milk
1 tbsp ground flax
1 tbsp golden rasins
~Place the above in bowl and place in the refer
~cut berries
~take out of refer & place berries on top
delicious and chewy

Leeky Salmon + Green Beans + Quinoa
Love it when I can make dinner during the week!
I was experimenting with leeks. I have never used them before, quite honestly I didnt even know how to cut them, until last night!
Start with your leek
cut the green top and the bottom root-part off
then slice the middle section
steamed green beans
Quinoa + leftovers for the week
mixed and placed in small bowl:
2tbsp olive oil
s&p
chopped leeks
then brushed that on my salmon ~~ If you dont double dip your brush, dump the rest in your quinoa for extra flavor
I placed it under the broiler for 9 minutes
And wahla! Dinner is served!

Raw Oatmeal Raisin Balls
ingredients:
1 c oats- I used Bobs Red Mill G-free
1/2 c pitted dates- about 6
1/2 c raisins
1 teaspoon cinnamon
water
agave syrup or honey (not pictured)
place oats and cinnamon in food processor or blender. Blend until coarse.
add dates & raisins. pulse until chopped up. add water 1 tbsp at a time until forms thick paste. Option to add agave here.
I used a cookie scoop and put them in mini cupcake liners. you are form them into balls and smush them into cookies

Tuna Wrap
Lunch today was a tuna wrap. nutritious. easy. delicious.
Ingredients:
1 brown rice tortilla
1 pouch tuna in water
2 tbsp greek yogurt
1/2 carrot, diced
1/2 lemon, juiced
Parsley
oh yes, and when i am cooking with tuna- I ALWAYS have a helper!
Place all ingredients into mini food processor. If you dont have a mini food processor, place in a bowl and start mixing! The food processor just helps to mix it and break up the tuna very fast!
place on brown rice tortilla with some baby spinach
my tortilla split on the sides. I think thats just the nature of brown rice tortillas. enjoy :)

Broccoli + Cheddar Omelet
Good Morning! Day2 of Live Lean workouts. So much fun and the perfect way to start the day.
Today I had a great breakfast filled with lots of protein and veggies!
Broccoli + Cheddar Omelet
Ingredients:
1 egg
2 egg whites ( 1/3 cup of whites)
1 cup broccoli
2 tablespoons sharp cheddar cheese
1. Trim Broccoli. Place in bowl, add 3 tablespoons water, nuke in microwave for 1 minute.
2. Place the eggs, whites, broccoli,and S&P in a skillet over medium heat.
3. Cook 2-4 minutes until eggs are cooked.
4. Top with cheese
Enjoyed with a slice of Ezekiel bread
